PICKLE SPRITZ.

A pickle cocktail recipe for people who think every drink could probably use a pickle. Cold, salty, herby, fizzy, slightly sweet and so pickly.

PICKLE CORDIAL

Focus on equal parts pickle brine and water, then half the amount of sugar. I'd do one cup pickle brine, one cup water and half a cup sugar.

Pop in a little Tubby Tom's Pickle Dust if you have it, but it's not essential. Add chopped cornichons, lemon peel and a ton of fresh dill.

Add everything to a pan and warm gently until the sugar dissolves. Strain, then chill completely. You should get roughly 450 to 500 ml of cordial, depending how much the dill and cornichons steal from you.

03 / THE METHOD

    Dust the rim of a frozen wine glass with pickle dust. I like to fill mine with a mix of pickle brine ice and normal ice.

    Add the pickle cordial, Lillet Blanc and vodka straight into the glass.

    Pour in around 80 ml Prosecco, then top with soda water.

Finish with a few drops of orange blossom, a cornichon and a little sprig of dill.
PICKLE WARNINGThis is not a subtle drink. It is a fizzy pickle in a party dress.
